Deli Classics: Half-Sour and Full-Sour Pickles

On June 5, 2015 by Brent's Deli

Jewish delis are notorious for pickles, and we’re no different!

We serve two types of pickles:

  1. Full-sour (also known as “old” pickles) which have been fully soaked
  2. Half-sour (or “new” pickles) which are soaked for a shorter time – giving them a crisper taste and a brighter green color

Pickles to sandwiches are like ginger to sushi: They cleanse the palate between bites, enhancing the flavor of hot pastrami on rye (or any other sandwich).
